雞蛋大餅─彩虹姐
作法:
取水晶杯,放入240克50度溫水
放入4克鹽攪拌至融化
取水晶碗,放入400克中筋面粉
少量多次加入鹽水拌勻
攪拌成絮狀後,揉成面糰
加蓋,醒面10分鐘再揉
表面抹一層薄油,裝入保鮮袋中
密封醒面半小時
案板撒些許乾面粉
取出面糰,直接切2份
取ㄧ份面糰整理,按扁
上下擀開
橫過來,擀成長方形大面餅
塗上油
用刮板刮勻
撒上鹽
撒上白胡椒粉
撒ㄧ層乾面粉
上下各切四刀
